Intense ruby-red in color, SYMBOLO offers layered aromas of wild blackberries, graphite, smoke, and forest floor. On the palate, these notes are intertwined with hints of sweet spice and violets. Structurally it manages to show both powerful and elegant sides as it unfolds into a long, silky finish.

Region: Asterousia area (Mandilari from Karkadiotisa area), Central Crete

Soil: Clay (Sandy loam with a good amount of stone for Mandilari)

Wine making:

Hand-harvested in 15kg boxes. Thorough selection of grapes followed by soft de-stemming. Classic red vinification, fermentation-extraction lasted 5 days at temperatures between 25o and 32o C. The wine was aged in new oak barrels for 17 months (17% American oak, 83% French oak).

Tasting Note:

Deep ruby-red colour. Ripe dark fruit supported by oak spices and cocoa butter with a hint of coconut milk. Powerful on the palate, full of chewy tannins with an incredidly long and savoury finish.

Food matches:

Serve this wine with juicy steaks, slow-smoked ribs, or with veal Parmigiano veal. Serve at 16°C - 17°C.
