Domaines Ott Étoile 2021 - A UNIQUE CHARACTER

Étoile 2021 continues to deepen the path of experimentation begun in 2019 while going down its own way. A path that could later take a completely different direction, with nothing set in stone and everything left to be written.

Producer Information

Domaines Ott was founded in 1912 by Marcel Ott, an agricultural engineer from Alsace who dreamed of establishing a great wine estate near the Mediterranean. Today, the wineries are owned and managed by Champagne Louis Roederer and produce some of the world’s most prestigious wines, but particularly rosé wines, made at distinctively different estates in Bandol and Côtes de Provence appellations.

This new cuvée is born between the land and the sea, it is a wine that lives and breathes Provence. Etoile is the embodiment of Domaines Ott’s terroirs and a reflection of their love for this unique wine region. A place where vineyards and olive groves grow side by side, where the clear blue sky embraces the ochre soils, where time passes slowly, a truly magical place that blends seamlessly into its landscape. A land that they cherish because it represents their childhood, the land in which they grew up, the land that nurtured them into adulthood and helped them to become the wine producers that they are today.

Vineyards

Étoile is a rare wine, a wine that combines the very best of Domaines Ott’s three Provence domaines: The schist terroir at Clos Mireille is reflected in the delectable saline character; the limestone soils at Château de Selle give this wine its finesse; and the calcareous sandstone and sandy marl soils at Château Romassan imbue Étoile with structure and power.

Winemaking

Vinification in stainless steel and 25% of the wine is aged in spherical ceramic vats to accentuate the purity of the estate grown fruit.

Vintage Information

Like our rosés, which are capable of long aging, Étoile has a very great ability to evolve. It is a wine in its own right, a terroir wine that we wanted to make for the long term.

Over the years, the vintage effect will fade, slip away, to restore only the terroir and the personality of its soils. The salinity of Clos Mireille, the power of Château Romassan, the finesse of Château de Selle remain and will survive the year.

With time, the wine will gain volume, defy its contours, as if to root its terroirs deeper at its heart.

A balmy autumn was followed by an equally mild winter. It was the time for manuring our soils and butting up the vines. After enjoying their rest, the vines stirred into life again with a classic budburst in early spring. On the night of 8 April, some of the vines where hit by frost. But nature surprised us by allowing new buds to emerge and bear fruit. The spring was rainy and the start of the flowering was late. The summer was hot, as it has been for almost 10 years, with heatwaves of varying duration and intensity. On 19 August, the grape pickers set to work to harvest the first bunches of Grenache

Tasting Note

The colour is a bright pale pink flecked with silver. The nose is enveloping, mineral and dominated by citrus fruit and enriched by aromas of mango, white peach, raspberry and roasted almonds. The palate shows a remarkable continuity. Very intense, it takes on breadth with grapefruit zest and empyreumatic notes and ends with a very long, mouth-watering finish and a touch of liquorice

Food Pairing : A truly gastronomic wine, cuvée Étoile is the perfect partner to Bouillabaisse, turbot, and shell fish dishes.

Serving Suggestion : Best served at 10°-12°C.

Palate-staining peach nectar, raspberry and honeysuckle flavors are given lift and back-end cut by a minerally undercurrent. Concentrated but impressively lithe as well.
