Chablis 1er Cru "Vaillon" Dry White Wine Chardonnay
The appellation of Vaillon is located on the left bank of Chablis. We have 6 parcels of a total area of 4,7 ha in the historical heart of the Vaillons, all exposed south/south-east. The soil is also from the Kimmeridgien period with clay-limestone marls rich of marine fossils, and most specifically small oyster fossils, called Exogyra Virgula. Premier Cru Vaillon is produced from those vines by blending five different parcels which average age is from 37 to 74 years old.
Tasting: very aromatic, generous, and fine wine with citrus and white fruits, and flowers flavors.
Perfectly matches with all fish, shellfish, poultry, or white meat. To be served between 12 and 14oC.

Chablis Premier Cru Vaillon
Our vineyard is located in the village of Chablis, in the very heart ofChablis, on the left bank of the Serein River, and benefit from aexcellent south, south-east exposure. The soil is made up ofkimmeridgien clay, a soil specific to the Chablis region. It is rich infossil shells of a small oyster, Exogyra virgula, frequently found in theChablis soil.
Our wines are certified organic with Ecocert since 2013.
Density plantation: 6500 plant/ha.
Vinification Average age of the vines: 63to 73 years old.
Harvested by hand, carried by small trailers, which unload the grapes by vibrationto avoid crushing,then we use a sorting table to eliminate unripe or damaged grapes.
Pneumatic winepress. Cool racking. Natural yeasts. Winemaking and aging:
55% in stainless steel vats with temperature-controlled fermentation.
45% in barrels (2-3-4 years old barrels, less than 5% of new oak) for 8 months, and blending beforebottling. 100% of the malolactic fermentation.
Natural tartaric stabilisation after 12 to 16 months aging
Vintage 2021
After a period of frost, especially on April 6&7th, we had a humid June month and the flowering was done only around June 20th.
In July, the temperatures were normal but we had a steady period of rain and humidity and the sickness pressure was very strong till the beginning of August.
We finally started our harvest on September 20th and without surprise we did 50% less in general due to our April frost. The bigger lost was in our Ier Cru Vaillon, Grand Cru Valmur and Vaudésir. Les Clos and 2 parcels of Vaillon were not too bad, thanks to our frost protection who did their job !
The 2021 are fermenting nicely and already delivering some nice aromas, but we got to be patient with it.
The 2021 in our opinion is absolutely superb and will be enjoyable young and after a few years for the Grand Cru .
