Chablis Moreau White Dry Wine Chardonnay
We also produce a cuvee of Chablis made from grapes that we buy from two bordering villages: Fontenay-Près-Chablis (near the appellation of Fourchaume) and Béru.
Tasting: On white fruit flavors with a nice minerality, perfect for the aperitif or with oysters, shellfish, or just grilled fish.

Vintage 2021
After a period of frost, especially on April 6&7th, we had a humid June month and the flowering was done only around June 20th.
In July, the temperatures were normal but we had a steady period of rain and humidity and the sickness pressure was very strong till the beginning of August.
We finally started our harvest on September 20th and without surprise we did 50% less in general due to our April frost. The bigger lost was in our Ier Cru Vaillon, Grand Cru Valmur and Vaudésir. Les Clos and 2 parcels of Vaillon were not too bad, thanks to our frost protection who did their job !
The 2021 are fermenting nicely and already delivering some nice aromas, but we got to be patient with it.
The 2021 in our opinion is absolutely superb and will be enjoyable young and after a few years for the Grand Cru .
Chablis Village
These grapes come from 2 vineyards located in FontenayPrès-Chablis and in Béru next to the village of Chablis
The soil is kimmeridgien calcareous clay which goes back to the upper Jurassic age (portlandien). Density of plantation: 6500 vines/ha
Vinification
Manual harvesting, we use trailors to transport the harvest and unload it with a vibration system to avoid crushing the grapes and oxidation before pressing.
Pneumatic press.
Cold settling and fermentation with a temperature of around 20°c. Natural yeasts .
Vinification and aging: 100% in stainless steel tank.
Aging between 10 to 12 months.
