ASPRA CHARAKIA

A libation in the most delicate indigenous variety of Crete. Clear yellow color with greenish reflections. Delicate and elegant on the nose where the scents of the autumn Cretan countryside are fragrant. Balanced mouth with the citrus fruits winning the impressions leaving a pleasant and punchy acidity for the end.

It accompanies extremely soft cheeses, legume salads, fatty fish but also poultry with white sauces and vegetable risotto.

It is served at a temperature of 9o-12oC.

Another "treasure" of Crete, a white variety with excellent potential.

It is active, vigorous and fertile with medium to large nipples and slightly firm flesh that gives it structure and character. It gives us yellow-green coloured wines with intense, distinct and complex fruity aromas, with herbal notes. Its full body gives us a rich and balanced mouthfeel.

Our vineyard takes advantage of the coolness from the Asterousia Mountains and offers us a quite exotic and cool Vidiano.

WINEMAKING

Skin contact maceration for 7 hours at 8 °C

Fermentation in stainless steel tanks with cooling jacket at 15-17°C

During fermentation, lees stirring (bâtonnage) takes place to keep the lees in contact with the wine and extract flavour, aroma, and texture.
