Deep red color with purple nuances at the rim. Rich taste with black fruits, licorice flavours and traces of leather and cassis. Fine tannins, long and delightful aftertaste. St. Sava's Field 2011 remains for 12 months in French oak five-ton barrels, 12 months in oak barrels of 225 lt. and 12 months in the bottle.

Holy Monastery of Hilandaron

It takes time to create this exceptional wine. A wine steeped in timeless monastic tradition, handcrafted in limited quantities, with love and devotion by the monks of Hilandar. With grapes grown on vines dating back to the foundation of the Holy Monastery of Hilandaron the sacred mountain of Mount Athos in 1198.

And it takes time to enjoy this exceptional wine but it’s time well spent.

We live in a world of abundance. Sometimes it seems that we have everything. Except time.

Timeless Mount Athos. A UNESCO World Heritage site. Far from the “distraction of the distractions,” the blips and beeps, likes and shares and the endless breaking news updates in the hectic world we live in.

The Holy Monastery of Hilandar. Where grapes are cultivated at vineyards dating back to the foundation of the monastery, producing wines steeped in monastic tradition, made with love and devotion by the monks of Hilandar since 1198.

Vineyards

The St. Savas Field vineyard spans across the slopes of Mount Athos up until the Aegean Sea. Within the 17 hectares of vineyards, selections of Merlot, Cabernet Franc and Cabernet Sauvignon are produced.

The microclimate of Mount Athos with its cold nights and mild warm days makes this an ideal location to grow grapes of exceptional quality.

Harvest

Τhe grapes are collected by hand with devotion by the holy fathers of the Monastery while the vinification and bottling procedure is carried out in the winery of the Holy Monastery of Hilandar.

The Winery

Wine has always played a role in everyday monastic life at the Holy Monastery of Hilandar.

The necessity to create a new winery that would be able to fulfill the needs for the production of larger quantities of wine came up after the devastating fire of the year 2004 which destroyed almost completely the monastic complex of the Holy Monastery of Hilandar.

The monks of the monastery soon realized that a larger production would provide them with the resources needed to rebuild the monastery. Up to that time the amount of wine produced was to meet their daily needs. With the aid of a team consisted of experienced experts from Belgrade, new wine - roots were planted in the vineyard of St. Savas Field, which existed since the foundation of the monastery.

The monks decided to expand the winery in order to share the treasure of Hilandar and generate the revenues required for restoration.

Today, the modern winery of the Monastery of Hilandar is housed in a traditional, stone - building with cellars that dates back to 1734 and located near the vineyard of Saint Savas.

A portion of all sales go directly to restoring the monastery and its treasures.
