This delicious gin is rich, rounded and versatile in flavour with a beautiful delicate finish.
When our family first starting distilling gin 150 years ago – Old Tom was the London Gin of choice.
Today it’s a less familiar style of gin, but it is still a bartender’s favourite when making cocktails such as the Martinez, Tom Collins and Ramos Gin Fizz. The generous quantities of botanicals used in our family recipe create a bold citrus and juniper pine character that is smooth and beautifully delicate with a subtle underlying sweetness.
Serving
It’s perfect for a more rounded and fuller flavoured Gin & Tonic and absolutely delicious with Sicilian lemonade.
About Hayman’s
The very essence of Hayman’s is that we still make our gin today using the same family recipes developed over 150 years ago. Using only the finest botanicals available combined with the two-day gin making process, our botanicals are infused in English wheat spirit for an entire day allowing the full natural flavours to shine through.
The Hayman’s copper pot stills perform an essential role in our gin distilling process – allowing heat to be dispersed evenly and efficiently while stripping out any unwanted flavours and aromas. These stills are at the very heart of what we do – in creating the bright and balanced, smooth flavour of our gins.
Sherbet Mimosa
35ml Hayman’s Old Tom Gin
20ml Homemade Lemon and Orange Sherbet
English Sparkling Wine
To make the sherbet, muddle the peel of 2 lemons and 2 oranges with 230g of caster sugar in a Kilner jar. Leave for several hours (ideally overnight), shaking the mixture occasionally, until it becomes a syrup. Remove the peel, add 100ml lemon juice and 85ml orange juice and stir until dissolved. Keep in the fridge for 2-3 weeks.
Pour the gin into a champagne flute, followed by the sherbet.
Slowly top with the sparkling wine.
Garnish with a twist of orange zest.

Making your own sherbet will not only take you back to your childhood, but it allows you to capture your own perfect balance of sweet and sour that embodies a classic sherbet. If you’re after a truly mouth-puckeringly sour finish, add a bit of extra lemon zest and juice.
White Negroni
35ml Hayman’s Old Tom Gin
25ml Cocchi Americano Vermouth
20ml Suze Bitters
2 dashes Grapefruit Bitters
Fill a rocks tumbler with cubed ice
Build the ingredients over the ice
Garnish with a wedge of orange

The nuanced world of bitters is at the heart of a Negroni. Experimenting with different types of bitters will add a range of subtle twists to this classic cocktail. A drop of Peach Bitters will create a soft, rounded mouthfeel whilst Orange Bitters will enhance the drink’s natural sweetness.
