Lyrarakis Plyto Psarades
The Plytó grape variety was saved from extinction by the Lyrarakis family, when it was planted in the "Psarades" family vineyard at 480m altitude in central Crete in the early '90s.
An elegant wine, with clean fruity aromas of high intensity, a full and versatile mouthfeel, and a noble tannic style that balances its taste.
Tasting Note:
Bright yellow colour. Nose with aromatic intensity, composed of green apple, kiwi and fresh nut aromas with some evident oak. The palate is elegant and nice balanced with citrus and a lightly buttery aftertaste.

All sea food, a large variety of cheese and cream sauses. Serνe at 10oC. - 11oC

Wine making:
Timing the harvest is the most important decision for the winemaker. This year we achieved το make harvests in the vineyard, based and focused on the average organoleptic characteristics perceived in 3 different sτages of the grape's maturation. For the winemaking, we followed the principals of classic white fermentation as well as aging 12% of the wine in 500lt new French oak, where it has completed the malolactic fermentation. Both the alcoholic and the malolactic fermentations were achieved by using selected yeast and bacteria from a complete organic habitat (Βiο Certificate). Only yeast derivatives were applied for the stability and natural fining of the wine.
