Vinification: The grapes are collected with hands and carefully moved into small baskets. Then de-scraping and rapid removal of the precursor must to avoid color (Blanc de noir technique). Alcoholic fermentation with selected yeasts at controlled low temperatures to preserve fresh fragrances.
