In 2010, three childhood friends decided to produce a young artisanal mezcal straying away from the usual clichés associated with our country. They created Mezcal San to serve as a window to modern Mexico, offering the best of this land to the world.

Mysticism, magic, and history surround Mezcal San Cosme. Since ancient times, this spirit has been associated with different medical uses. Its name derives from Saint Cosmas, patron saint of doctors, who on diverse occasions defied death, healing a lot of ill people. Many miracles were and are attributed to him because he would appear on the convalescent dreams curing all of those who implored his aid.

Tasting Notes

Color: Mezcal San Cosme is bright, translucent, and has a great body that is appreciated on the walls of a mezcal cup.

Mouth: Its body and aroma are the preludes to the distinctive flavor of smoked agave mixed with leather.

Nose: Its distinguished aroma has hints of agave, with dashes of smoke, wood, and soil.

Finish: Even though its taste lasts for a while, its finish es pleasantly warm.

PLAYA SAN COSME

Ingredients

2 oz Mezcal San Cosme

2 oz pineapple juice

½ oz lime juice

1 oz coconut water

¾ oz natural syrup

3 oz milk

2 coffee filters

Preparation

Pour all ingredients in a cocktail shaker with ice and shake vigorously

Pour mixture in a mixing glass and add the milk

Filter the mixture using the coffee filter and pour into a glass

This drink uses big ice cubes.

REMEDIO MEDITERRÁNEO

Ingredients

1.5 oz Mezcal San Cosme

1 oz thyme syrup2.

5 oz grapefruit juice

3 drops olive oil

Preparation

Put all ingredients in shaker filled with ice and shake firmly

Pour it in a long drink glass

Decorate with a grapefruit slice and some thyme

Mezcal is an agave distillate that can be produced out of 20 different kinds of agave. We use Angustifolia Haw, also known as agave espadín, which imparts an exceptional flavor.

Mezcal is granted with of Denomination of Origin (DO) since 1994 and it can only be produced in 9 different Mexican States:

DURANGO, GUERRERO, GUANAJUATO, MICHOACÁN, OAXACA, PUEBLA, SAN LUIS POTOSÍ, TAMAULIPAS, ZACATECAS.

HANDCRAFTED PROCESS

SOWING: For Mezcal San Cosme we use 100% Espadín agave. To secure the sustainability of this plant, we leave 5% of our harvest to bloom to guarantee health and genetic diversity. Santiago Matatlán Valley, in Oaxaca, reunites perfect conditions of sun, humidity, and soil for the agave harvest.

HARVEST: Our Maestros Mezcaleros, Don Neto and Wil, carefully choose mature agaves from our fields. It’s a long process, in which a lot of patience is required: Espadín Agave can take 8 to 10 years to ripen. When the agave flower, the quiote, starts to grow, the plant is ready to be harvested, because it has the highest concentration of sugar.

JIMA: Jima is a key process in the production of a hand-crafted Mezcal. Out of this procedure, you obtain the heart of the agave, where the needed starches for Mezcal gather. You cut the tips of the plant; after that, you defoliate the agave until you get to its heart, which will be cooked to extract its precious and characteristic flavors.

COOKING: The cooking of Mezcal San Cosme lasts for usually three days. The piñas (pineapples) of agave are cut into pieces and deposited in the classical conical stone oven. A great fire, out with mesquite wood, imparts the characteristic smoky flavor to Mezcal. Once the agave hearts are cooked, the starches will break down into sugars.

GRINDING: Once the oven is open, the agave hearts are taken to the Egyptian grinding. Pulled by a horse, our tahona stone grinds the agave until it becomes bagasse, which will be taken to our wooden fermentation tanks.

FERMENTATION: Maybe the most mystical step of the whole production is when the sugars turn into alcohol through the wild yeast of Santiago’s Matatlán Valley. The tanks made out of oak are filled with the grounded bagasse and water from a nearby well to start this magical process. Don Neto and Wil are the only ones that know when the fermentation is ready. This procedure can last from 2 to 12 days.

DISTILLATION: We distill two times in copper pot stills, heated by mesquite wood. Once distilled, the puntas and colas (head and tails), unwanted residual alcohol, are removed. Before bottling, the remaining liquid is brought under a thorough filtration process to clean all impurities left. This is the way Mezcal San Cosme is born, a young mezcal created out of work, passion, and tradition.

BOTTLED: Before bottling, Mezcal San Cosme will be leveled at 40% ABV. It’s filtered through 12 carbon filters to ensure that no volatile substances are left in our Mezcal.
