Visual test : Brilliant golden yellow color.

Olfactory test : Bouquet of peach blossom, sage, acacia and honey.

Techniques

Grapes : Moscato Bianco di Canelli

Vinification : The hand-picked grapes are transferred to the cellar and immediately softly pressed. The must undergoes a natural decantation, to then be filtered and kept at a temperature of zero degrees. The must is then left to ferment in small pressure vessels with the addition of selected yeasts.

Sparkling method : Martinotti method with which the aromatic characteristics of Moscato Bianco are maximized.

Pairing : It goes perfectly with jams and fruit tarts, heaven cake, panettone, colomba and apple charlotte.
