Edinburgh Seaside Gin
Inspired by East Coast beaches near Edinburgh, a unique London Dry style gin defined by juniper, soft salinity and sweet notes.
Originally made with foraged shoreline botanicals, Seaside Gin was the first of our collaborations in partnership with Heriot-Watt University’s Brewing and Distilling MSc course.
We sourced marine plants including scurvy grass, ground ivy and bladderwrack to create a gin with distinctive minerality. These are complemented with aromatic spice notes from grains of paradise, coriander and cardamom.
Bottled at 43% ABV, Seaside Gin makes for a bracingly refreshing G&T, and perfectly garnished with a sprig of green samphire in summertime. Alternatively, try a Seaside Martini with olive and anchovy garnish to create a pleasingly briny drink.

Put some wind in your sails with this invigorating refresher.
Ingredients
40ml Seaside Edinburgh Gin
15ml Green Chartreuse
10ml sugar syrup
15ml lime juice
3 dashes celery bitters
Muddled samphire
Fever-Tree Tonic Water
Fresh samphire to garnish
Method
Muddle the samphire in a shaker.
Add ice and add all other ingredients (except the tonic water).
Shake well.
Strain into a goblet over ice.
Top up with tonic water.
Garnish with a sprig of fresh samphire.
