Miyagikyo Bourbon Wood Finish

Finished for one year in first-fill bourbon casks, this version shows us the single malt produced by the Miyagikyo distillery in an even richer, more vanilla, spicy and fruity light than normal. Add to this an extremely invigorating feeling of freshness in the aromatic palette, and a particularly mouth-watering salinity in the flavour palette. To put it in sporting terms, Miyagikyo has radically upped its game.

Profile: the delicate initial nose is lush, vanilla and floral. Allowed to breathe, spices (cinnamon) and liquorice bring lots of creaminess. It then becomes increasingly fruity (Mirabelle plum). The rich attack brings new fruits (pineapple, white peach). The mid-palate is malty and saline. The slightly tannic finish reveals fresh and black fruits (bramble).

TASTING NOTE

Appearance : golden yellow.

Nose : fine, sappy. A subtle mix of vanilla and verbena flower, the initial nose is fresh and voluptuous. Allowed to breathe, spice (cinnamon, ginger) and liquorice bring lots of creaminess and elegance. The vanilla register has continued to intensify, whilst ripe fruits (pear, apple, Mirabelle plum) have appeared alongside it. As a whole, it is wonderfully balanced.

Palate : delicate, rich. The attack adds white peach and pineapple to the basket of fruits offered by the nose. The mid-palate is set on giving malted barley a leading role and reveals pleasant salinity. Gradually the chromatic palette moves from intense yellow to soft green. This evolution takes place harmoniously, with the nose and palate showing the same balance and richness.

Overall : long, slightly tannic. Bourbon vanilla, fresh fig and star anise create a warm and dynamic flavour ensemble. A few ripe fruits (bramble, blueberry) and alfalfa add a touch of mystery. This change of scene is in reality an invitation to explore new horizons. The retronasal olfaction evokes a vanilla flan or a chestnut dessert. The empty glass is undeniably malty and lush.
