DRY WHITE WINE PGI PELOPONNESE
Chardonnay
CHARACTERISTICS: Light yellow-green hue. Explosive aromas of fresh ripe exotic fruits and lemon zest. Aromatic and vibrant flavor, interesting and vivid, thanks to its acidity and a pleasant metallic hint. Lingering, aromatic aftertaste.
VINIFICATION: Mild pressure of carefully selected grapes and alcoholic fermentation of the grape must in a small stainless-steel tank, using selected strain of saccharomyces, in low temperatures. At the end of the fermentation process, the fresh wine is left to sit for a few days with its fine lees also in a low temperature.
VINEYARDS: Asprokampos: “Vidia” vineyard on the Stymphalia plateau, grown in deep, clay, alkaline soil, rich in calcium carbonate. The production does not exceed 9000 kg/ha. The area’s climate is characterized by cold winters, with plenty of rain and snow, cool springs and dry summers, with high temperatures in the daytime and cooler nights.
SERVING SUGGESTIONS: Mediterranean cuisine, sea food, roast fish, fresh salads and pasta. It can also be served with aromatic vegetable or sea food risottos and white meats.
