“Ippodromos” - Vidiano 100%
The “Ippodromos” vineyard lies on the top of a mountainside, at an altitude of 610m., on rocky clay soil. The very promising cretan grape variety Vidiano, brings out exceptionally its distinctive characteristics when grown on the “Ippodromos” vineyard.
Tasting Note:
Yellowish colour with platinum tones. Intense aromas of ripe apricot and peach with hints of buttery, earthy and spicy elements. Α unique in texture taste, full of honeyed richness with great concentration of fruit and an impressively lengthy aftertaste.
Food matches:
All sea food especially fatty fishes, a large variety of cheese and meat with cream sauces. Serve at 12 °C - 14 °C.

Wine making:
The grapes were night harvested under the full moon of August. One third of the crop was the selected lagging clusters on lateral shoots (ln Crete these secondary bundles are called “campanus”) which were νinificated whole in “Perle” type barrels (Perle is a 400 French oak barrel with a specific closure that keeps C02 or reductive conditions inside). Campanus remained in the Perle barrel for 3 months. The rest 2/3 of the grapes were macerated for 12 hours followed by spontaneous barrel fermentation ln new French oak. After fermentation which lasted 25 days, the wine remained ln barrel for two more months.
