Founded in 1846, the Caol Ila distillery was entirely rebuilt in 1974 according to the plans of architect George Leslie Darge. Equipped with six imposing pot stills, it produces a single malt that not only delights big-name master blenders but also independent bottlers. This particularly expressive and truly magnificent version transports us in the true sense of the word. Relentlessly traversed by curls of smoke and an exquisitely gentle sea breeze, the aromatic palette is a succession of wild sequences and moments of peace and tranquillity.

Profile: the elegant initial nose is characterized by notes of smoked salmon, candied lemon, almond milk and fine hail. Allowed to breathe, it becomes floral (peony) and ashy. The stately attack reveals a liquorice peat covered in salt. The well-balanced finish offers a taste of oily and salty (seaweed) peat. As a whole, it is extremely mineral. Single Cask no. 302465 – Hogshead. Exclusive to LMDW.

TASTING NOTE

Appearance : vibrant gold.

Nose : clear, elegant. Smoked salmon, soot, candied lemon, almond milk and even hail... these are the first protagonists to enter into action, right from the first nosing. Allowed to breathe, it develops floral (tulip, peony) and aquatic (reed, water lily) notes. Next, extremely subtle fragrances of hollyhock and ash land on the surface of the aromatic palette.

Palate : dense, stately. A liquorice peat seizes the taste buds without any opposition. Gradually it moves closer to malted barley. On the mid-palate, lime and Guérande salt answer the call. These are accompanied by grey peppercorn, some liquorice stick and a layer of vanilla. The end of the palate is resolutely marine and luscious, almost syrupy (verveine du Velay).

Overall : distinguished, well-balanced. The peat has become more oily and at the same time more salty (seaweed, kelp). A sea breeze brings with its curls of ashy smoke. The very mineral (schist, basalt) retronasal olfaction is also lush and lemony. The empty glass allows us a glimpse of peat (ointment, camphor).
