Hayman’s Royal Dock Gin

First supplied to the English Admiralty in 1863, Hayman’s is still proudly making our Navy Strength Royal Dock Gin. The style is bright, bracing and smooth with a brilliant balance of juniper, coriander and citrus – without tasting at all overpowering.

Bottled at a traditional Navy Strength of 57% ABV, this hearty style of gin is suited perfectly to mixing a classic Pink Gin. Also wonderful in a traditional Gimlet, originally mixing the sailors’ daily tot of gin with the lime ration provided to fight off scurvy.

The bright flavours of citrus, juniper and coriander in Hayman’s Royal Dock make this gin the perfect match for spicy Indian food, as the robust flavours stand up well to the traditional Indian spices.

Navy Negroni

A classic Negroni with a serious kick of botanical flavour. Using our Royal Dock Gin bottled at 57% gives this Negroni a brilliant balance of juniper, coriander and citrus – without tasting overpowering.

25ml Hayman’s Royal Dock

25ml Campari

25ml Sweet Vermouth

2 dash angostura bitters

Fill a rocks glass with ice.

Measure out the ingredients over the ice.

Stir with the ice for one minute.

Garnish with a wedge of orange and an olive.

The Gimlet

The Gimlet is a classic gin cocktail with a rather interesting history. Lime juice had to be consumed in the 17th century to help sailors fight scurvy, a painful (and sometimes lethal) disease caused by a vitamin C deficiency. Naturally, sailors found mixing lime juice with gin made it much more palatable, and so The Gimlet was born.

50mls Hayman’s Royal Dock

10ml Roses Lime Cordial

Chill a coupette glass.

Stir all ingredients over cubed ice in a mixing glass

Strain into the coupette glass.

Garnish with a lime wheel.

Bartenders tip:

If you have time we recommend making your own lime cordial – simply mix 10ml of lime and 10ml of sugar until dissolved.

Sugar Snap Gimlet

50ml Hayman’s Royal Dock Gin

20ml Cocchi Americano (Vermouth)

15ml Homemade Sugarsnap Shrub

1 dash Celery Bitters

1 dash Lemon Bitters

To make the shrub, heat equal parts white wine vinegar and sugar in a saucepan until the sugar is dissolved

Add a handful of sugar snap peas, simmer for 5 mins then allow to cool

Strain before bottling and leave in the fridge for 1-2 days

Chill a martini glass

Stir all ingredients over cubed ice in a mixing glass

Strain into the martini glass
