A vineyard we entirely planted ourselves on the limestone soils of Saint Martin.
5% Viognier - 30% Marsanne - 20% Picpoul - 30% Clairette – 8% Ugni blanc – 7% Bourboulenc
Fermentation: 40% in demi-muids, 50% in small casks and 10% in tanks.
Ageing on the lees
Dried apricot, bush peach, marshmallow, fennel.
Due to the frost on April 8, 2021, we lost 80% of our whites from St. Martin. So there is very little Viognier in our 2021 blend, hence its fresh, mineral profile. Don’t forget that – just like our Rouanne Brut Nature – we vint this wine as if it were a Grand Cru. It shows precision, delicacy and finesse.
